Dark Roasted Beans Make for a Deep Dark Chocolate
This weekend we tried over-roasting a batch and made a pure dark chocolate with some of our last beans from Madagascar. We got the beans to express deep, carmel notes and an excellently intense cocoa like nothing else in this chocolate, and I could not be happier with how it turned out!
